Last week I caught myself staring – and I have to admit, almost drooling – at my colleagues lunch, yet again. It’s the third time I saw her munching on a yummy fresh looking broccoli salad. So this time I asked her for the recipe. She told me it’s one of them Thermomix creations, but sure thing, she’ll give it to me. Yay! I don’t own a Thermomix and I don’t plan on doing so. I have a regular food processor that cost about 100 Dollar and that’s plenty. I don’t need one of them 1.000 $ monster machines. But I was willing to give it a go with the tools at hand. So shopping I went…
I altered the recipe a bit as my tummy and peppers don’t get along very well. I used carrots instead and added an onion cause I figured it might work good in this combo. Also I made the dressing proper for a fit girl. No one needs 30 ml of oil in a salad!!!
It didn’t take long and voilà – I had my very own raw broccoli salad and it was time to dig in!!!
Super Easy Raw Broccoli Salad With Options
Ingredients: What you’ll need
The greens (or oranges or reds)
- 1 broccoli (without the stem)
- 4 carrots
- 1 red onion
- 1 apple
The dressing
- 3 tablespoons white balsamic vinegar
- 1/2 a lemon, the juice that is
- 2 tablespoons olive oil
- 2 teaspoons honey
- fresh ground pepper
Optional options
- sunflower seeds
- Feta cheese
- chicken breast
- brown rice

Can you hear Montel Jordan’s hit from 95 while reading this subline? I can! And I started singing right away. And suddenly I am 15 again – hahaha. I am that kind of person who often hears songs in her head, whenever I hear or think special words or phrases. Is this a superpower? I guess you could say that! And I like it 😉
Now, back on track: You peel, cut, wash or measure all the ingredients and put them in a food processor. Hit the power button and wait till everything is diced up. Done!
(A little tip: Split the ingredients in half so your food processor is only half full. Impatient me didn’t do that and the processor had a little difficulty to chop everything into the same size. The bits on the bottom of the container were already sorta mushy when there were still big chunks of broccoli on top. You might want to aim for at least some bits and peaces to chew on, so you won’t feel like a toothless baby or gram.)
Don’t want just greens? Want some substance, too?
No problem! To make this a full fit fam meal you could add brown rice (I added 1/3 cup) as your carbs, and feta cheese (say a thumb thick slice – or the amount your meal plan allows) or grilled chicken breast (I seasoned mine with fresh ground pepper, garlic powder, and some fennel seeds – yum!!!) as your source of protein. It’s also very delish to add some sunflower seeds (I used two teaspoons per serving).
