Crazy-Good & Low-Calory Strawberry Cupcakes

If you have a sweet tooth like I do and are equally not blessed with those enviable genes that let you eat absolutely everything and not gain an ounce (oh my, what would I give to have this god given ability…) then you might shout out a big hallelujah over this absolutely easy recipe for *you won’t believe it: super healthy!!!* Low-Calory Strawberry Cupcakes!

The secret of healthy food

In order to make a recipe healthy, you might want to skip all the processed ingredients and swap them for clean ingredients instead. What do I mean by clean eating, you ask? Basically you avoid processed or refined products and opt for organic produce, complex carbs, and good fats.

You want to make sure you eat or drink things that are hardly altered by us humans. I know this can be expensive but it doesn’t have to be, you guys!!! If you don’t want to pay big money, you could always decide to make your own products instead of buying or eating out. After just a little while you’ll find a routine, and whip up your clean food in no time. Promise!

Prepare things in bulk to save time. The Low-Calory Strawberry Cupcakes are also super yummy for breakfast. Simply don’t decorate them right away. Pop them in the microwave for a couple of seconds and have them first thing in the morning, too.

Make your own apple sauce. This way you’ll KNOW it’s super healthy because you decided over all the ingredients yourself. It can be canned super easily, too. Just follow along my instructions on how to make homemade apple sauce.

Ingredients:

  • 120 g oats
  • 1 teaspoon baking powder
  • 1 teaspoon all spice or cinnamon
  • 1 pinch of salt
  • 1 banana
  • 100 grams apple sauce (learn how to make your own)
  • 2 tablespoons butter or margarine
  • 5 tablespoons maple syrup (3 for the batter and 2 for the topping)
  • 4 tablespoons milk
  • 2 teaspoons vanilla bean paste (you can use the seeds of one vanilla bean instead) – 1/2 for batter, half for topping
  • 2 eggs (can be replaced by one extra banana or 150 ml apple sauce)
  • 1 1/2 containers of cottage cheese (200 grams each) or 250 grams curd cheese
  • 250 grams strawberries (or any other fruit or berries)

How to make Low-Calory Strawberry Cupcakes

Pin it for later!

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix the dry ingredients in a bowl.
  3. Mash the banana and add apple sauce, maple syrup, milk, vanilla bean paste, egg and melted butter.
  4. Stir into the dry ingredients.
  5. Pour batter into silicon cupcake baking dishes (depending on the size 1-3 per person or serving).
  6. Bake for approximately 20 minutes (again, this depends on your baking dish size).
  7. Blend the cottage cheese, vanilla bean paste and maple syrup till it’s smooth.
  8. Garnish your Cupcakes with topping and strawberries and enjoy!

Save some for later!

If you want to save some of your Low-Calory Strawberry Cupcakes for later, don’t decorate them with the topping just yet. Put both in separate air proof containers and store in your fridge. Before diving in on them, pop them in the microwave for a couple of seconds or in your oven so they won’t be too cold. Add a blob of your topping and fruit. Et voilà! Done. Yum.

Notes
The measurements of the maple syrup and vanilla bean paste are to be split according to the directions in the list of ingredients as they're for the batter and the topping.

The Cupcakes reheat well for a hot breakfast and do taste good cold, too! Simply store the topping in a tupperware container and garnish directly before eating.
